In the sporting arena, he has reached the impossible, leading the family with the highest concentration of 10-goal handicap players on the planet. Yet, his true legacy lies in his role as a disruptor, seamlessly blending the sport of kings with high-level business.

 

From Disney documentaries and Netflix series to fashion labels, luxury real estate, and avant-garde polo events in the desert, on the snow, and even the beach—Cambiaso has done it all. He brought the fervor of Argentine football to the stands of Palermo, pioneered high-competition mixed-gender teams, and revolutionized the industry through equine cloning. Now, he is raising the stakes once more with the opening of La Dolfina Polo Café, a sleek, minimalist sanctuary in the heart of Buenos Aires’ most sophisticated district.

 

Located in the chic Palermo neighborhood—occupying the same legendary grounds that once housed the original La Dolfina Bar—this new venture at the historic Palacio Alcorta is a masterclass in design and gastronomy. It is not merely a café; it is a flagship experience designed to embody the brand’s elite DNA.

 

Representatives from La Dolfina shared with POLOBIZ that the concept is built upon "a high-end, full-service restaurant experience with exceptional food quality, gourmet multi-course meals, artful presentation, and a luxurious ambiance." Every element is curated to provide meticulous, professional service, focusing on premium ingredients and an unwavering attention to detail.

 

To ensure this vision meets world-class standards, the project is backed by Grupo Abridor. This premier Argentine retail and gastronomy group—renowned for managing concepts led by Michelin-starred chefs—is responsible for the development, management, and end-to-end operations. Furthermore, they will serve as the engine driving the brand’s global franchise expansion.

 

The aesthetic soul of the project was breathed into life by architect Diana Lisman, who led the conceptual design alongside architect Nicolas Morilla Tauzy. Together, this creative powerhouse will oversee the visual identity of the brand as it scales globally.

 

The Palacio Alcorta flagship serves as the starting line for an ambitious international circuit. La Dolfina Polo Café has already set its sights on Palm Beach, London, and Dubai, among other polo capitals. To fuel this global fine-dining expansion, the company is collaborating with specialized investment firms Windy Ventures and BLAC, securing the capital necessary to bring Argentina’s most admired polo brand to the world’s most exclusive corners.
