Nacho Figueras’s New Restaurant in the US

Ignacio "Nacho" Figueras is widely recognised for his deep-seated passion for design, architecture, fashion, and the arts. Above all, he is defined by a meticulous obsession with detail. This personal touch is immediately apparent upon entering his new Florida establishment, The Polo Room. Located in the heart of Palm Beach, the restaurant features an equestrian-inspired interior where Figueras’s Argentine heritage influences every interaction and where, fittingly, open fire plays a central role in the culinary experience.


The newly opened venue seamlessly blends continental cuisine with Argentinian roots and refined aesthetics, capturing the enduring allure of the polo lifestyle. While the menu is grounded in continental traditions, it pays a personal tribute to Figueras’s upbringing, featuring pristine seafood and prime meats alongside handcrafted empanadas, a raw bar, crudos, seasonal salads, and house-made pastas.


The dining experience offers a diverse range of flavours:


Entrées: Options range from indulgent lobster frites with hand-cut chips to savoury asado-style steaks, fish, and shellfish prepared over a grill.


Accompaniments: Dishes are paired with classic sauces such as chimichurri or au poivre.


Desserts: The selection draws from Figueras’s childhood memories, including "Mima’s chocolate mousse"—his mother’s cherished family recipe—alongside traditional flan and dulce de leche crêpes.


Dinner entrées at The Polo Room start at approximately US$ 36.


The bar programme mirrors the kitchen’s precision, offering signature cocktails such as The Twenty-Two Below Zero Martini, served with frozen olives, and The Polo Room Iceberg Skinny Cosmo. These are complemented by an extensive wine list featuring over 300 selections from iconic global vineyards. Inside, the atmosphere is defined by rich textures and warm tones, with equestrian details that subtly echo the sport’s heritage and the effortless sophistication of Palm Beach.


A standout feature of the interior is an exclusive art installation curated in partnership with the legendary photographer Ricardo "Snoopy" Motran. The collection showcases evocative imagery of Palm Beach polo icons and milestone moments from the 1980s and 1990s.


Nacho Figueras co-owns the venture with prominent local restaurateur Thierry Beaud, a leading figure in Palm Beach gastronomy. Beaud was a key member of the team behind PB Catch, the acclaimed seafood and raw-bar establishment that operated for 14 years. Following its closure in early November, the space has been reimagined to house this new restaurant concept, marking a sophisticated new chapter for the Palm Beach dining scene.
